Aash

Aash, a vegetarian dish, is generally translated as Persian soup. This is the most basic form of Persian soup that can be easily converted to more elaborate dishes by simply adding other ingredients like prunes to make Aash-e aloo , pomegranate to make Aash-e anar or plain yogurt to make Aash-e must . Once you know this basic recipe, you can create other delicious Aashes (or Persian soups) just as easily by adding the right ingredients at the right time.

For 4 servings

100 g Rice (4 oz)
50 g Yellow split peas (2 oz)
28 g Aash herb mix (1 oz)
5 ml Salt (1 tsp)
0.6 ml Turmeric (1/8 tsp)
0.6 ml Black pepper (1/8 tsp)

 

preparation

1. Add rice and yellow split peas in a pot with 1.5 liters (6 cups) of water and bring to a boil. Reduce heat to medium-low and simmer for 40 minutes
2. Add Aash herb mix , stir well. Let simmer for another 20 minutes at low heat. Stir occasionally and serve.
